The Blues BBQ Company was started in 2004 with $20,000, a truck and a dream. Two brothers, Patrick and Chris, decided to give the people of Frederick, MD “Real BBQ!” Most of the BBQ found in Maryland was less than average and mostly over-cooked. Dried out beef and pork could be found at almost any BBQ Restaurant. Good BBQ needs to be smoked over wood. Great BBQ needs to be smoked over a wood blend for the perfect amount of time, at the perfect temperature and lived! That’s we strive to do. We don’t smother our BBQ in sauce, we compliment it with sauce. Patrick has traveled all over the country to eat BBQ, finding some great and some not-so-great. These recipes are compiled from tasting BBQ from all over the world.

Starters

Grit Cakes- You can only get these here. Grits slow cooked, mixed with jalapenos, spices and Romano. Deep fried ’till golden brown.
Muchos Nachos- WE fry out own chips and top them with our award winning chili, cheddar, jalapenos, salsa and sour cream! add chicken for a small fee.

Salads, Pizza and Burgers

Pulled Chicken Tortilla Salad- Romaine and mixed greens, smoked chicken, corn kernels, black beans, tomatoes, feta and crispy tortilla strips.
BBQ Chicken Pizza- BBQ Chicken layered over our sneaky heat sauce, topped with red onions, smoked Gouda, Mozzarella and Cilantro.
Margherita Pizza- Roma Tomatoes and fresh basil atop a four cheese Italian blend brushed with olive oil.
Blues Traveler- This Burger will change your idea of what a burger should be! Fried pickles, cheddar and our spicy dip. It’s unbelievable!
Honcho- You will definitely feel the love here! This burger is NUTS! 7 oz. topped with BBQ sauce, cheddar, pulled pork and slaw.

Sandwhiches

Memphis and Carolina Pulled Pork- Dry rubbed, slowly smoked pork shoulder using apple and mesquite woods. Pulled and mixed in sauce and stacked high on a kaiser roll.
Brisket Burrito- Sauteed brisket with onions, salsa and cilantro. We then add cheddar and avocado and wrap it up in a chipotle flour tortilla.
Bourbon Glazed Filet Mignon- Filet Mignon marinated with our bourbon glaze, 1st grilled, then sliced. Served medium with melted muenster and charred tomato confit.

Platters

Baby Back Ribs- We start with the meatiest “baby’s” we can find- dry rub ‘em with our “sugar” and smoke ‘em with a blend of woods for an incomparable flavor. Finished on the grill. Nothing but LOVE! Wet or dry, both will change your idea of what a rib can be.
1/2 BBQ Chicken- Dry rubbed and grilled til it falls apart. If you like tender chicken, this is for you! Grilled with our Grumpy Sauce.

Sides

Fresh Cut Fries- You will not be able to stop yourself! Boardwalk got nothin’ on these fries. “They’re Crackalackik”
Creamed Succotash- Lima beans and sweet corn sauteed with onions and garlic. Finished with a cream reduction.
Sweet Scallion Hush Puppies- If you start eating ‘em, you won’t stop. Deep fried corn fritters. Sweet and Savory.
Collard Greens- Just like grandma’s cooked with ham hocks and bacon. It take a lot of “guts” to cook greens down here when you’re from up there.
